My daughter Laura and I founded StarPie Health in honor of my daughter Lisa (see her story below).

This is a photo of my beautiful daughter Lisa who inspires me every day. My name is Karen Quirk and I am a mom and health advocate who would like to make a difference. My interest in nutrition and health began when Lisa was diagnosed with cystic fibrosis at the age of 2.
Lisa ultimately lost her battle with CF at age 23; however, it is my firm belief that nutrition and Juice Plus played a major role in her quality of life and vitality. With my younger daughter Laura, we founded StarPie Health Enterprises in honor of Lisa’s legacy. Lisa’s nickname was StarPie which came from a childhood game that became a symbol of her loving and selfless nature and ability to soften the hearts of many.
Nutrition played a big role in Lisa's health for better or worse and the recommended diet for CF included high fat foods and supplements that never seemed to help her thrive. When she was in high school I discovered a whole food product called Juice Plus. When you feed the body with whole foods, the body can use these raw materials to fuel and protect. As a mom, you know when your child is feeling better. There are now 21 studies that show Juice Plus is bioavailable and I believe Lisa's health improved because she was now absorbing nutrients from these fruits, vegetables and berries that were juiced and dried and put in a capsule (pre-digested). Because of this gift of health we were fortunate found us, I felt I needed to share it with other families. I embarked on my Juice Plus+ journey and have developed a passionate and dedicated team. As a certified nutrition educator, I feel it is important to help others get the education they need to be physically healthy. And as a national marketing director, I am able to work my business from home. I am a long-time board member of Prevention Chicago hosting educational events and trainings in the Chicago area. My background is in government, medical transcription, acting and theatre. I love to read, cook, listen to music, spend time with family and friends and enjoy the special moments in life.
My youngest daughter Laura is a music major and exploring the healing arts and my son Mark is a talented artist and the Pied Piper of animals and children. Our family dream is to open a type of sanctuary or refuge for lost and abused animals. My intention is to help children and adults find healing and hope and my mission statement is “No child left without tomorrows.”

Hello, my name is Laura Quirk. I’m 22 years old
and I was recently told I am the first music major at Dominican. Needless to say, being the first of anything has its ups and downs and it has been quite a journey. I gave up trying to force myself into majors just because they were
financially viable and went with one of my greatest passions which is music. I’m
a self-taught pianist and only have been taking serious lessons for a few years, but when I’m 90 years old, I still want to be rocking out on my (hopefully future) Steinway. I always say the only other man that has my heart besides my boyfriend of 3 years is Frederic Chopin.
If you know me at all, you know my love for animals. I have three rambunctious rescue dogs and two very pampered cats. I’ve been vegan for seven years and it is such a huge part of my life. For me, veganism is the easiest way to feel healthy, lighten your ecological footprint, and certainly benefit the animals. My goal is to one day start a farm sanctuary where we rescue farm animals that are left for dead. My brother is also an animal lover and wants to run an adjacent rescue for dogs. Growing up it seemed my brother and I would bring home a new animal every month, at the expense of my father’s extreme frustration.
Going vegan was really the spark that ignited my interest in nutrition. As a matter of fact, I originally came to Dominican with the intent of majoring in dietetics, however the nutrition department and I did not really see eye to eye. My mother and I work for the same wonderful company, Juice Plus, dehydrated fruits and vegetables in a capsule. We grow fruits and vegetables in a tower garden, which uses an aeroponic growing system. While the art of nutrition means a lot to me, I am horrible at being a stickler and would rather die early than give up wine or onion rings.
